Almond Flour and Flaxseed Pancakes

Ingredients:

  • 1 cup almond flour

  • 1/4 cup ground flaxseeds

  • 4 egg whites

  • 1 tsp baking powder

  • 1/2 cup milk (any kind)

  • 1 tsp vanilla extract

  • 2 tbsp honey or maple syrup

Instructions:

  1. Combine Dry Ingredients: In a large bowl, mix together almond flour, ground flaxseeds, and baking powder.

  2. Whisk Wet Ingredients: In another bowl, whisk together egg whites, milk, vanilla extract, and honey/maple syrup.

  3. Mix Together: Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Cook Pancakes: Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

  5. Serve: Serve warm with your choice of toppings like fresh fruit or yogurt.

Flaxseed and Almond Flour Cookies 

Ingredients:

2 cups almond flour

1/2 cup ground flaxseeds

3 egg whites

1/4 cup coconut oil, melted

1/3 cup stevia or erythritol

1/2 cup dark chocolate chips (optional)

Instructions:

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Ingredients: In a bowl, combine almond flour, ground flaxseeds, egg whites, melted coconut oil, and sweetener. Stir until well combined. Fold in chocolate chips if using.

Shape Cookies: Scoop tablespoons of dough and shape into cookies. Place on the prepared baking sheet.

Bake: Bake for 12-15 minutes or until the edges are golden brown.

Cool: Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Berry and Flaxseed Muffins

Ingredients:

1 1/2 cups almond flour

1/2 cup ground flaxseeds

4 egg whites

1 tsp baking powder

1 cup mixed berries (fresh or frozen)

1/4 cup honey or maple syrup

Instructions:

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

Combine Dry Ingredients: In a large bowl, mix almond flour, ground flaxseeds, and baking powder.

Flaxseed Berry Smoothie 

Ingredients:

  • 1 tablespoon ground flaxseed

  • 1 cup unsweetened almond milk

  • 1 cup frozen berries (blueberries, strawberries, or raspberries)

  • 1 banana

  • 1 tablespoon almond butter

  • 1 teaspoon honey or maple syrup (optional)

  • A handful of spinach (optional)

Instructions:

  1. Combine all ingredients in a blender.

  2. Blend until smooth.

  3. Pour into a glass and enjoy!
