- 1 pound 92% lean ground turkey, chicken breast, or ground beef
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1/4 cup finely chopped spinach
- 1/4 cup oat flour (or finely ground oats)
- 1 egg white
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Whole grain or lettuce wrap for serving
Toppings
- Sliced tomato
- Sliced avocado
- Red onion rings
- Leafy greens (lettuce, spinach, or arugula)
- 1 tablespoon Greek yogurt or hummus (optional)
Instructions
1. Preheat your grill or skillet to medium-high heat.
2. In a large bowl, combine ground turkey or chicken, onion, garlic, spinach, oat flour, egg white, Dijon mustard, salt, and pepper. Mix until well combined.
3. Form the mixture into 4 patties.
4. Grill or cook the patties in the skillet for about 5-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
5. Serve each patty on a whole grain bun or wrapped in lettuce. Add your favorite healthy toppings like tomato, avocado, red onion, and leafy greens.
6. Optionally, add a dollop of Greek yogurt or hummus for extra flavor.

Ingredients for Baked Fries:
- 2 large russet or sweet potatoes, cut into thin strips
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Ingredients for Homemade Ketchup:
- 1 cup tomato puree
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon smoked paprika (optional)
- 1/4 teaspoon black pepper

Instructions for Baked Fries:
1. Preheat your oven to 425°F (220°C).
2. In a large bowl, toss the potato strips with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
4. Bake for 25-30 minutes, turning halfway through, until the fries are golden brown and crispy.
5. Remove from the oven and let cool slightly before serving.

Instructions for Homemade Ketchup:
1. In a small saucepan, combine tomato puree, apple cider vinegar, honey or maple syrup, garlic powder, onion powder, salt, smoked paprika, and black pepper.
2. Bring the mixture to a simmer over medium heat, stirring occasionally.
3. Reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally, until the ketchup thickens to your desired consistency.
4. Remove from heat and let cool. Store in an airtight container in the refrigerator for up to two weeks.
